When I was younger, my mom would make a great loaf of bread. She would pour the yeast in the warm water and use it immediately to make her dough. After kneading for several minutes, she would cover the bowl with a towel and let the dough proof for an hour before adding toppings, baking, and cooling. It wasn’t until years later that I learned how to make bread using instant yeast. This method is much faster because there isn’t any waiting time needed for the dough to proof. In order to create breads like my mom’s, I usually need about ten minutes of kneading and proofing time.
